Ingredients:
- Crayfish (cooked and tail and legs only)
- White wine (Cook that with the cream to become non alcoholic)
- Cream
- Lemon (on the side)
I love the shrimp like pink cooked flesh of the crayfish with the creamy and salty sauce accompanying the dish
My favourite desserts (I can't choose only one)
Ingredients:
- Home made coconut custard
- Thin layer of toffee ( to put on top of the custard
- Raspberry coli (to accompany the cremebrulee
Why I love the dessert so much is because I love the creaminess of the coconut with custard and the caramel tones of toffee over top with the sweet sharp tang of the raspberry's to finish the elements off

- Vanilla panna cotta (a jelly textured cream that has hardened in the fridge)
- Raspberry coli
- coconut cream
